Makes enough for 10 people
Ingredients for the Clementine Syrup (produces 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Cocktail (makes 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish
Method
For the Cordial: Place the listed items into a pan, bring to a gentle boil, agitating to dissolve. Next, take off the burner and leave to cool fully. Pour into an sterilised bottle, seal and store in the fridge, it can be stored for up to four weeks.
Preparing the Cocktail Base: Mix the specified liquid ingredients into a big jug, leave to sit for one hour, then pass it through best through muslin, making it fully clarified.
For serving: Measure 85ml of the premix into a cocktail shaker containing ice, and agitate lightly for one minute until cold. Filter into an cold coupe glass or equivalent, top with some cranberries adding the final touch with a brief mist of mandarin oil above the glass.
